Scrambled Eggs and Nettles
It's that time of year again, where my Nettle patch is exploding! No food in the fridge for lunch, what to do? Nettles of course, simple and fast.
I heat up the frying pan and add oil, than add the Nettles and keep them moving. To speed up the process, I add about a half cup of water and cover quickly to steam the Nettles till they wilt, than remove the cover and let the water evaporate to make sure the Nettles are dry when I add the eggs ( I hate watery eggs). Scramble as many eggs as you like and add them to the Nettles and keep them moving. Viola! A supper healthy lunch.

Great! I've been waiting for my nettle patch to produce little babies, and the seedlings have just sprouted (southern Australia). It's almost impossible to find nettles around here. If I didn't want them, they'd be everywhere, of course.

Very cool, I had no Idea Nettles grew in Australia.Don't know what your climate is like where you live, but here, they start to come back as the weather starts to get cooler: (http://ethnobotanist128.blogspot.com/2012/10/nettles-again.html ) Would love to hear more about Herbs in Austrailia.

This year was my first foray into the world of wild edibles. Just two days ago I had my first taste of "stinging nettle". I plucked the top two or three small leaves, twirled them into a ball and popped them into my mouth. Interesting taste.

Don't know where you live, but my Nettles are not at an edible stage right now, you shouldn't use them when they are in flower. I will be cutting mine back to the ground this weekend and wait till the cool weather brings fresh new succulent leaves.
You are very brave trying to eat then raw!
